One highlight was opening the first Champignons outlet and seeing customers returning week after week, turning curiosity into loyalty. Build your foundation solidly, and don\u2019t rush into trends.\u201d<\/p>\n\n\n\n<p>Creativity, he insists, must always coexist with operational discipline. He finds inspiration by watching both global and local trends, and by returning to the fundamentals of flavour and storytelling.
